Primary Function

The Senior Cooks primary role is to oversee the preparation, cooking, and presentation of meals for all Dining Operations. Duties associated with this role include directing cooks in their section in preparing, cooking, and presenting culinary dishes; enforcing strict culinary, health and hygiene standards in the kitchen; and trouble-shooting any problems that may arise.

Typical Duties & Responsibilities

1. Initiate and oversee the production of all food produced and in preparation for Dining Hall and all other venues from kitchen to final presentation from on premise to off premise.

2. Has the ability to present food in an artistic and captivating manner, maintaining a keen eye on detail and creating the best overall experience for the customer.

3. Ensure the timely provision of high quality and optimum quantities of food from the University kitchen, relevant to the catered event, for students, staff and visitors, as directed by the Sous Chef.

4. Prepares and presents food and menus from kitchen to plate. Supervises the activities of all cooks and kitchen personnel during the event.

5. Ensure adherence to the Universities Food Safety and Work Place Safety policies at all times.

6. Ensure that necessary paperwork, administration, controls and records are undertaken and maintained as directed by the Sous Chef to include Work Place Safety, Food Safety, Production and any other as requested.

7. Participates in training programs as required and, in liaison with the Sous Chef, ensure that training requirements for team members are identified and followed up.

8. Ensure that high standards of customer service are maintained at all times.

9. Supports the Sous Chef role as appropriate and as directed.

10. Any other duties as requested by the Sous Chef/Executive Chef.

Judgment Required Performance of the essential duties of this position is dependent upon independent ingenuity and developmental efforts.

all standard kitchen equipment such as grills, ovens, mixers, tilt skillets, charcoal grills etc.

Job Specifications/Position Qualifications (minimum)


High school diploma or equivalent


5 years culinary experience.

Job Related Skills

Excellent knife skills, food assembly and fabrication to include garde manger, charcuterie and final presentation. Familiar and well versed in all cooking methods, i.e. baking, roasting, frying, grilling, sauté, barbecuing, smoking, boiling, steaming and braising etc.
